Slow Cooker Soy Salmon Lettuce Wraps

We’ve shared our heart healthy recipes this month with the Chinese New Year celebrations. Since Dim Sum (those delightful bite sized morcels) translated literally means “Touch the Heart”, we’ve made our own little parcels of tasty goodness – steamedSoy Salmon Lettuce Wraps

They are both slightly salty and sweet, what we expect from Asian dishes which balance on the palate.

A healthy percentage of high-quality fat and lean protein in a meal satisfies and leaves feelings of energy, fulfillment and warmth. Fats and oils from whole foods and other high-quality sources can;

steady our metabolism, reduce inflammation, keep hormone levels even, nourish our skin, hair and nails and provide lubrication to keep the body functioning fluidly.

Salmon is a fabulous source of lean protein as well as omega-3 fatty acids, Vitamin D and selenium (an anti-oxidant).  Choose wild or organic farm-raised salmon as these have the least amount of pesticides and antibiotics.  Notable benefits of salmon include;

anti-inflammatory properties, cognitive, eye health and cardiovascular

Combining salmon with ginger and garlic add fabulous flavor as well as utilizing the anti-inflammatory properties of ginger and the improved blood flow properties of garlic.

 Appreciate this simple dish as it is, or sprinkle with dried pepper flakes for added bite.

Servings up to 24 lettuce wrap or serves 4-6 as a dish with rice

Ingredients
4 cloves/2 tsp garlic, minced
2 tablespoons fresh, ginger, minced
2 star anise
½ cup / 4 fl oz low sodium soy sauce
2 tbsp lime juice
⅛  cup honey
1 1/2-2 lbs skinless salmon fillets
scallions
crisp iceberg lettuce

Spray the inside of your slow cooker with non stick spray or oil

Combine the garlic, ginger, star anise, soy sauce, lime juice and honey into a small bowl and stir.

Dip each salmon piece in the garlic mixture one at a time.

Layer the pieces of salmon in the bottom of your slow cooker and pour over any remaining mixture when you’ve finished.

Cook on low for 90 minutes. When cooked, break up the salmon, spoon into lettuce leaves and scatter scallions on top.
